Abstract: Oat is a cereal such as wheat, corn, barley, etc. The most significant part is that consumption of Oat has multilateral protective action to the human body compared to other cereals. Oats are sustainable crops that benefit the environment when included in a three- or four-year crop rotation. Carb alternative selection, become more and more trend widespread as well as Oat contains high amount of soluble fiber which lowing cholesterol and blood glucose levels. Moreover, Oat is a suitable carbohydrate type for athletes, due to its high protein content. Recent years, this cereal has received a lot of attention by consumers due to to beneficial effect on human health. After COVID 19 pandemic, healthy lifestyle trends became more popular around the world. The main purpose of this study is to examine the prospects of Oat Cereal as a product in Greece. This research will take place in Thessaloniki in a form of questionnaire, aiming to the comprehensive analysis of customer beliefs about Oat cereal.
